The aim of this study was to determine whether the different American oak wood tones (light, rose and dark) influence wine ageing.
The study was first structured on the chromatic classification of the American oak and then on the wine tasting analysis of wines aged in different tones.
The analytical results that the tonality of the wood influences the volatile competition of the wine, however at the polyphenolic level tonality has no effect.
